RECIPE: Peanut Butter Cup Cookies


PEANUT BUTTER CUP COOKIES

INGREDIENTS

1 3/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup softened butter
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1 egg
1 teaspoon vanilla extract
2 tablespoons whole milk
40 miniature peanut butter cups

METHOD

1. Preheat oven to 375 degrees Fahrenheit
2. Combine flour, baking soda and salt in a bowl and set aside.
3. With a spoon or mixer, cream the butter, white sugar, brown sugar and peanut butter until well mixed.
4. Beat in the egg, vanilla and milk.
5. Add flour mixture in intervals while mixing.
6. Take a tablespoon and scoop enough dough to make little round balls about the size of a walnut.
7. Place them on an ungreased cookie sheet about an inch and a half apart. Bake for 8-10 minutes.
8. While baking, unwrap the peanut butter cups.
9. As soon as they come out of the oven quickly press a peanut butter cup into each cookie.
10. Let the cookies cool on the baking sheet for a couple of minutes then transfer to a cooling rack.
